TACO PIE ==== === Ingredients ----------- * 6-8 medium size (8") tortillas * 500g ground beef * 1 Tbsp veg oil * 1/2 red onion * 4 cloves garlic * 2 Tbsp paprika * 1 Tbsp ground cumin * 2 tsp chili powder * 2 jalapeno peppers * 1 small can (125g) corn * 2 tomatoes * 1/2 C cilantro * 2 scallions * 1/4 C sliced black olives * 1 tsp lime juice * 1 can refried beans * 200g monterey jack, cheddar or other cheese * sour cream, salsa, guacamole, etc. for taste Procedure --------- 1. Preheat oven to 400 degrees. Chop the onion, tomatoes, scallions, peppers, and mince the garlic. 2. In a large frying pan over med-low, fry the red onion, peppers and garlic in oil until softened. Then add the beef and spices (paprika, cumin, chili powder) and fry until cooked through. Turn to low and stir in the corn. 3. Meanwhile, in a medium bowl, mix together the tomatoes, cilantro, chopped scallions, olives and lime juice. 4. Spread 2 Tbsp of refried beans over a tortilla and place in the bottom of an 8" cake pan, bean side up. Add enough of the beef mixture to cover the entire tortilla, then grate a few Tbsp cheese over top. 5. Prepare another tortilla + refried beans, the same way, and place it in the pan, over top of the beef and cheese. This time spread a couple Tbsp of the tomato mix on top. 6. Continue alternating layers of beef+cheese and tomato, until there is no more filling left (should be close to the top of the pan). Put a final tortilla on top (this time without refried beans) and grate a good amount of cheese over it. 7. Cover the whole casserole with tinfoil and put it in the oven for 25 minutes, until heated completely through and the cheese has entirely melted. Some juices may ooze out of the cake pan, so may be a good idea to place it on a tinfoil-lined baking tray or other catchment method to keep the oven clean. 8. Serve along with sour cream, salsa and guacamole.
