- 4 plantains - 4 Tbsp flour - salt - 1 C queso fresco corn oil 1. Boil plantains until soft (15-20 mins). Drain, allow to cool, peel and mash until smooth. 2. Add flour and salt, mix well to form smooth dough. 3. Using wet hands, form dough into balls, make an indentation and fill with cheese. 4. Pat dough balls into patties and deep fry in corn oil until golden brown on both sides.
