GALETTES PATATES

Ingredients

 * 1 large potato
 * 1/4 C parmesano/reggiano cheese
 * salt, pepper, oil, parsley, dill

Procedure

 1. Peel potato, grate, strain in cheesecloth. Wring out.

 2. Heat 8" skillet med-low, add 2-3 Tbsp oil/bacon fat.

 3. Add half the potato, then grate 1/2 the cheese, then add rest of potato.

 4. Salt, cook 5-6 min. Turn heat to med, cook anoth 2 min until bottom turns golden.

 5. Flip, add more oil, reduce to med-low, cook another 5-6 min.

 6. Grate rest of cheese, add salt, pepper, chopped parsley, dill and serve.
