DAL TADKA

Ingredients

 Dal
   - 1/3 C toor dal
   - 1/4 C moong dal
   - 1/4 C chana dal
   - 1/4 C masoor dal
   - 1 tomato
   - 2 green chilies
   - 1 tsp ginger
   - 1 pinch hing
   - 1/2 tsp turmeric
   - 1 Tbsp ghee
   - 1 tsp lemon juice

 Spices
   - 2 tsp ghee
   - 1 tsp mustard seed
   - 1 tsp cumin seed
   - 1 medium onion
   - 2 cloves garlic
   - 1 tomato
   - 1/2 tsp garam masala
   - 1/2 tsp chili powder
   - 5-6 curry leaves
   - 3 green chilies


Procedure
=========

 1. Soak chana dal for 4 hours.

 2. Drain chana dal. Rinse toor dal and moong dal, add all 3 together to pressure cooker along with 2 1/2 C water.

 3. Finely chop tomato, mince chilies and ginger then add to dal along with hing and tumeric. Mix. Cook at pressure for 18 minutes.

 4. Remove pressure cooker from heat, let cool 7-8 minutes then uncover. Add 1 Tbsp ghee and stir, leaving to simmer uncovered over low heat.

 5. Chop onion, mince garlic and tomato, slice green chilies lengthwise. 

 6. In frying pan, heat 2 tsp ghee, add mustard seed, cumin.

 7. When seeds crackle, add onion and garlic and fry over medium heat for 1-2 minutes.

 8. Add curry leaves, garam masala, chili powder and green chilies, stir.

 9. Add tomato, cook until tomato turns tender.

 10. Add lemon juice to dal, mash lightly, pour into a serving bowl. Add spices over top and garnish with chopped cilantro.
