AVOCADO PICO DE GALLO SALSA =========================== Ingredients ----------- * 4 roma tomato 450 g * 1/3 red onion 150 g * 3 green onion 25 g * 2 cloves garlic 10 g * 1 jalapeno 40 g * 1 thai red chili 5 g * 1 bunch cilantro 35 g * 2 tsp lime juice 10 g * 1 Tbsp sugar 13 g * 1/2 tsp cumin 1 g * 1/4 tsp coriander 1 g * 1/8 tsp pepper - g * 1/4 tsp smoked paprika - g * 1/2 avocado 60 g Procedure --------- 1. Soak red onion in water. Leave for ~1 hour. 2. Into large bowl: dice tomato, red onion; finely chop green onion, cilantro; mince garlic, jalapeno, red chili; squeeze lime juice; grind cumin, coriander, pepper; add paprika, sugar. 3. With hand blender, roughly puree pico de gallo to make a salsa, but leave large chunks. Let sit overnight or at least 2 hours. 4. Dice up avocado and add to salsa. Eat. Makes 3 Cups - about 350 kCal.
